Carl Mertens Country Santoku Knife:

In Japanese, Santoku stands for “three virtues” and adequately describes the optimal cutting properties of the typical Japanese all-purpose kitchen knife for fish, meat and vegetables. The shape of the knife differs slightly from that of the European chef's knife: the upper edge of the blade forms a straight line with the handle.

Country series:

Uncompromising classics for demanding chefs. The traditionally hand-forged quality knives COUNTRY are created in over 40 work steps - from forging to hardening, grinding and assembly. Each blade is red-hot forged from a piece of chrome-molybdenum-vanadium steel and then hardened to approx. 58 ° Rockwell. The knives are given the correct sharpness by experienced knife sharpeners. The blades are peeled off on a ceramic disc with an angle of 14 ° on each side. This results in the extreme sharpness and high cutting ability along the entire length of the blade - from the blade tip to the bolster. The bolster - the typical feature of forged knives - serves the optimal balance of the knife and prevents the hand from slipping into the blade. The handles made of smoked oak are permanently connected to the tang with three rustproof rivets. The individual grain makes every knife unique.
