Noble wood meets traditional blacksmithing - the Güde Alpha barrel oak filleting knife
The handcrafted filleting knife comes from the Güde Alpha Fasseiche knife series, which was developed in collaboration between Güde and the star chef Harald Rüssel. The combination of fine wood and traditional blacksmithing make this kitchen knife unique. The wood of the handle comes from oak wine barrels that are over 80 years old - the so-called Fuder barrel wood. Due to the long period of ripening, the oak wood used is considered to be almost indestructible and extremely robust. The Güde filleting knife lives up to its name. Thanks to the flexible blade, meat as well as fish can be filleted into wafer-thin slices. Their extreme flexibility enables clean and extremely precise work. However, due to its narrow blade, this knife is not suitable for chopping bones. The hand-forged blade made of chrome-vanadium-molybdenum knife steel is made from one piece, ice-hardened and hand-sharpened.

The handle shells are made of oak wood over 80 years old, which has become almost indestructible due to the long maturation. The blade is rust-free, ice-hardened and hand-sharpened - the handle is not dishwasher-safe.
