Noble wood meets traditional blacksmithing - the Güde Alpha barrel oak bread knife
The handcrafted bread knife comes from the Güde Alpha Fasseiche knife series, which was developed in collaboration between Güde and the star chef Harald Rüssel. The combination of fine wood and traditional blacksmithing make this kitchen knife unique. The wood of the handle comes from oak wine barrels that are over 80 years old - the so-called Fuder barrel wood. Due to the long period of ripening, the oak wood used is considered to be almost indestructible and extremely robust. The bread knife is made by the Solingen knife manufacturer Güde according to traditional craftsmanship. The knife from the Alpha Fasseiche series is largely handcrafted in over fifty steps. This creates a high-quality cutting knife for bread and rolls that is used in gastronomy as well as in private households.
With a blade length of 21 cm, the bread knife cuts all types of bread of all sizes. Even rustic breadcrusts can be cut into even, representative slices with this knife. The knife including the handle has a total length of 32.5 cm. The blade is continuously connected to the tang. With a weight of 200 g it lies securely and easily in the hand and helps the user to achieve a clean cutting result. The bread knife has the typical serrated edge on one side. This preserves the cutting ability of the knife and facilitates the clean cutting work.
The hand-forged bread knife from Güde has a blade hardness of 56 HRC. Accordingly, a simple regrinding is possible without the material suffering as a result. The one-piece blade of the knife is made of X50CrMoV15 steel. The mixture of chrome-vanadium-molybdenum is mainly used by the Güde company for the production of high-quality knives. This means that the blade has an optimal level of corrosion resistance, i.e. it is rust-free. The blade steel is ice-hardened after processing. As a result, the knife remains as sharp as when used for the first time, even after repeated use.

In cooperation with star chef Harald Rüssel, whose gourmet restaurant and Hotel Landhaus St. Urban is located in a side valley of the Mosel-Saar-Ruwer wine-growing region, Güde created this series - not only - for wine lovers and cooking enthusiasts. One-piece hand-forged blade made of chrome-vanadium-molybdenum knife steel. Further processing in over 40 manual operations. The handle shells are made of oak wood over 80 years old, which has become almost indestructible due to the long maturation. The blade is rust-free, ice-hardened and hand-sharpened - the handle is not dishwasher-safe.
